  • 12-cup Muffin Pan
  • Muffin cups/liners
  • Large mixing bowls
  • Whisk (or hand mixer)
  • Small bowl (for butter topping)

Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 1 cup Cornmeal
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1 stick (1/2 cup) Salted Butter, melted
  • 1/4 cup Vegetable Oil
  • 2 Eggs
  • 3/4 cup Sugar
  • 1 cup Whole Milk

For the Cinnamon Maple Butter

  • 4 tbsps Salted Butter, melted
  • 2 tbsps Maple Syrup
  • 1 tsp Ground Cinnamon

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the all-purpose flour, cornmeal, kosher salt, baking soda, and baking powder. Whisk these dry ingredients together thoroughly.
  3. In a separate medium bowl, whisk together the melted butter, vegetable oil, eggs, sugar, and whole milk. Continue whisking until the mixture is smooth and all lumps are gone. (A hand mixer can be used for this step for extra ease).
