  • 3 cloves Garlic, diced finely
  • 1 lb Jumbo shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
  • Salt and pepper, to taste
  • 8 Corn tortillas
  • Jalapeños, for garnish
  • Cilantro, for garnish

Garlic Lime Ranch

  • 1/2 cup Greek yogurt
  • 2 tbsps Mayo
  • 1 tbsp Parsley, finely chopped
  • 2 cloves Garlic, finely chopped
  • 2 tbsps Chives, finely chopped
  • 2 tsps Dill
  • Kosher salt, to taste
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 2 Limes, zested and squeezed

Instructions

  • Add olive oil to a large skillet over medium heat. Add the sliced bell peppers and red onions and cook for about 5 minutes, or until the onions begin to soften and become translucent. Stir in the chili powder, cumin, minced garlic, and salt and pepper to taste. Continue cooking for another 2 minutes to allow the spices to bloom. Remove the cooked vegetables from the pan and transfer them to a plate; set aside.
  • Carefully pat the jumbo shrimp dry with a paper towel. This step is important for achieving a good sear. Generously coat the shrimp with the Cajun seasoning, and add additional salt and pepper to taste. *Note: If your chosen Cajun seasoning blend already contains salt, be mindful and adjust any additional salt accordingly to prevent over-salting.
  • Add a little more olive oil to the same skillet over medium heat. Once hot, add the seasoned shrimp in a single layer, being careful not to overcrowd the pan. Cook the shrimp until they turn pink and opaque on both sides, which typically takes about 5-8 minutes total, depending on their size. Be careful not to overcook them, as they can become rubbery.
  • While the shrimp cooks, prepare the Garlic Lime Ranch sauce. In a medium bowl, combine the Greek yogurt, mayonnaise, finely chopped parsley, minced garlic, chopped chives, dill, kosher salt, onion powder, and garlic powder.
