  • 1/4 cup sour cream
  • 1/4 cup feta
  • 3 tbsps olive oil
  • 2 tbsps lemon juice

  • 1 tbsp parsley, freshly chopped
  • 1 tbsp chives, freshly chopped

Instructions

  1. Preheat the oven to 450 degrees F (230°C).
  2. Bring a large pot of water (about 8 cups) to a rolling boil. Add baking soda and a pinch of salt. Carefully add the potatoes and boil for 20-25 minutes, or until they are fork-tender but not mushy.
