Soft, buttery lemon sugar cookies are hard to beat, but adding white chocolate elevates them to a new level. These chewy Lemon White Chocolate Cookies combine bright lemon notes with pockets of creamy white chocolate for a bakery-style finish without fuss.

Lemon White Chocolate Cookies 🍋

Lemon desserts are irresistible because they’re fresh, sweet, and a little tart. These cookies have crisp edges and tender, chewy centers with a clear but not overpowering lemon flavor. Chopped white chocolate melts into glossy, creamy pockets that make each bite feel indulgent. For lemon lovers, this cookie is a reliable favorite.

Flavor Note 🍋

Many recipes call for lemon juice, but much of that juice evaporates during baking and contributes less to the finished flavor than you might expect. The true lemon brightness in these cookies comes from fresh lemon zest and a concentrated lemon flavoring such as lemon emulsion or lemon extract. Save fresh lemon juice for desserts where liquid and tang are essential, like lemon bars or lemon curd cake, and focus on zest and emulsion for cookies.

Key Ingredients

(Full ingredient amounts are listed in the recipe card below.)

  • Lemon emulsion — a water-based concentrated lemon flavor that holds up well in baking and gives a bold, bakery-style lemon profile.
  • Chopped white chocolate — I prefer chopping a 4 oz white chocolate bar over using chips because chopped chocolate melts into creamier pockets for a bakery-like texture.
  • Bread flour plus all-purpose flour — bread flour adds chew and helps cookies remain thick, while all-purpose flour keeps them tender. The combination yields crisp edges and soft, chewy centers.
  • Almond extract — used sparingly, it adds subtle warmth and depth that enhances the lemon without tasting nutty.

For additional lemon recipes try a lemon meringue cake or a no-bake lemon icebox pie for different textures and uses of lemon juice.

lemon zest and sugar in a bowl.

Step 1: Cream butter, sugars, and lemon zest. Rub lemon zest into the sugar to release oils, then cream the mixture with softened butter and brown sugar until light and fluffy. This creates tenderness and distributes lemon flavor throughout the dough.

Step 2: Add eggs and flavor extracts. Mix in the egg and egg yolk, then stir in vanilla and lemon emulsion with a small touch of almond extract. The emulsion keeps the lemon flavor bright after baking.

Step 3: Add dry ingredients and white chocolate.
Stir in the bread flour, all-purpose flour, baking soda, and salt just until combined. Fold in chopped white chocolate, reserving a few pieces to press on top of each dough ball if you like.

Step 4: Chill, roll in lemon sugar, and bake.
Form large dough balls, chill them for an hour, then roll in lemon-scented sugar and bake until edges are set and centers are puffed. For smaller cookies, shorten the bake time accordingly.

Pro Tips For Success

  • Scrape the bowl well while mixing so all ingredients are evenly incorporated.
  • Weigh flour with a kitchen scale for consistent results; cup measurements vary and can make cookies dry or dense.
  • If you want a brighter color, add a drop or two of yellow food coloring—optional, but it creates a bakery-style appearance.

Equipment

  • Stand mixer
  • Baking sheet
  • Mixing bowls

Ingredients

  • 1 cup (227 g) salted butter, room temperature
  • 1 1/4 cups (250 g) sugar
  • 1/4 cup (55 g) brown sugar
  • 3 tbsp lemon zest
  • 1 large egg, room temperature
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tsp lemon emulsion (or lemon extract)
  • 1/4 tsp almond extract
  • 1 3/4 cups (222 g) bread flour
  • 1 1/4 cups (157 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 4 oz (114 g) white chocolate, chopped (or 1 1/2 cups white chocolate chips)

Lemon Sugar

  • 1/2 cup (100 g) sugar
  • 2 tbsp lemon zest

Instructions

  1. In a stand mixer fitted with the paddle attachment, cream the room-temperature butter with the sugar, brown sugar, and lemon zest on medium speed for 3–4 minutes, until light and fluffy. Reduce speed to low and add the egg and egg yolk; mix until incorporated, about 1 minute.
  2. Scrape the bowl and add vanilla extract, lemon emulsion, and almond extract. Mix until combined.
  3. Add bread flour, all-purpose flour, baking soda, and kosher salt. Mix until just combined and no dry patches remain.
  4. Remove the bowl from the mixer and use a spatula to fold in the chopped white chocolate, reserving a few pieces if you want to press them on top of each dough ball.
  5. Use a large cookie scoop to portion the dough into about 12–13 balls. Roll them and press any reserved white chocolate into the tops, if desired. Refrigerate uncovered for 1 hour.
  6. Preheat the oven to 350°F (175°C). In a small bowl, rub lemon zest into the sugar until fragrant and slightly colored. Roll each chilled dough ball in the lemon sugar to coat completely.
  7. Bake 5–6 cookies at a time, spaced about 2 inches apart, for 13–14 minutes, until edges are set and centers are puffed. For smaller cookies reduce the bake time to about 9–10 minutes. Immediately after removing from the oven, round the cookies with a large circular cutter or small bowl if you want perfectly round edges.
  8. Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
