What is She Crab Soup?

She Crab Soup is a rich, creamy crab bisque with Southern Lowcountry character. It begins with a light roux, seafood stock, and heavy cream. After simmering until thick and silky, a splash of dry sherry and fresh lemon juice lift the flavors and balance the richness.

Traditional versions sometimes include crab roe, but that ingredient can be hard to source. This version skips roe while keeping a deep crab-forward flavor. The result is silky, comforting, and focused on sweet lump crabmeat.

Main Ingredients and Substitutions

ingredients to make she crab soup on a baking sheet - jumbo lump crab meat, seafood stock, heavy cream, butter, flour, seasonings, shallots, celery, lemon, garlic, and bay leaves.

(Complete ingredient list and measurements appear in the recipe card below.)

  • Jumbo lump crabmeat: Large, sweet pieces that stand out in the soup. If unavailable, lump or backfin crabmeat will work and will distribute more evenly.
  • Butter and flour: Create a roux to thicken the soup. Cooking the flour briefly removes the raw taste without darkening the base.
  • Shallots, celery, and garlic: The aromatic base that builds savory depth.
  • Seafood stock: Provides the signature sea flavor. Choose a clean, savory stock rather than one that is overly fishy. Unsalted chicken stock can be used if needed.
  • Heavy cream: Delivers the soup’s smooth, luxurious mouthfeel.
  • Hot sauce and lemon juice: Add bright acidity and faint heat to lift the creaminess.
  • Dry sherry: A small amount at the finish gives the classic warm, nutty note—use cooking sherry sparingly; a dry table sherry is preferable.

How to Pick Your Crabmeat

For best results, choose refrigerated fresh or pasteurized crabmeat and inspect it carefully for shell fragments. Spread the crabmeat on a plate and pick through it gently before adding it to the soup.

If jumbo lump is out of budget, lump or backfin are good alternatives and create a different texture—smaller flakes throughout rather than large chunks.

celery, shallots, seasonings, and garlic in a large pot sauteed in butter.

Sauté the aromatics: Melt butter in a large pot over medium heat. Add diced shallots and celery and cook until softened, about 5 minutes. Stir in garlic and cook another minute until fragrant.

Build the creamy base: Sprinkle in flour, Old Bay, black pepper, salt, lemon zest, and a pinch of nutmeg. Cook 1–2 minutes while stirring. Gradually whisk in seafood stock until smooth, then stir in heavy cream and a little hot sauce.

Simmer and blend: Add bay leaves and simmer gently for 15–20 minutes until the soup thickens slightly. Remove bay leaves. For a silky, restaurant-style base, carefully purée the soup with an immersion blender or in a food processor. Blending is optional; skipping it leaves a chunkier, more rustic texture.

Add the crabmeat: Reduce heat to low and gently fold in the jumbo lump crabmeat. Warm for 3–5 minutes, stirring very gently to keep the chunks intact. Over-stirring will break the lumps down.

Finish and serve: Remove from heat and stir in lemon juice and remaining dry sherry. Taste and adjust seasoning. Garnish with chopped chives and extra lemon zest. Serve hot with oyster crackers or crusty bread for dipping.

Pro Tips

  • Pick through the crabmeat carefully: Even premium crabmeat can contain small shell fragments. Check it on a plate before adding.
  • Don’t rush the roux: Let the flour cook briefly with the butter and aromatics so it loses its raw taste before adding stock and cream.
  • Adjust salt at the end: Old Bay, seafood stock, salted butter, and crab can all add saltiness. Taste before adding more salt.
  • Add crab last and gently: Fold crab in over low heat and warm just until heated through to preserve jumbo lumps.

What to Serve With She Crab Soup

She-Crab Soup works well as an elegant starter or a hearty main. Serve with crusty French bread, oyster crackers, buttermilk biscuits, or warm dinner rolls for dipping. For a fuller Lowcountry meal, pair smaller bowls with shrimp and grits, crab cakes, fried green tomatoes, or a crisp green salad—the acidity and crunch balance the rich soup nicely.

Recipe FAQs

Can I make she-crab soup ahead of time?

Yes. Prepare the soup base up to one day ahead. Hold off on adding the crabmeat, lemon juice, and sherry until reheating to preserve texture and bright flavors.

Why is my she-crab soup too thick?

The roux continues to thicken as the soup rests. Thin it with a few tablespoons of seafood stock or cream at a time until you reach the desired consistency.

Can I use canned crabmeat?

Yes. Choose a high-quality canned variety and drain it thoroughly. Refrigerated pasteurized crabmeat often tastes fresher and holds up better.

Does she-crab soup have to contain crab roe?

Traditional versions often include crab roe, but it can be difficult to find. This accessible home version achieves richness through crabmeat, a proper roux, seafood stock, cream, and sherry.

Why is it called she-crab soup?

Historically, it was made using female blue crabs and crab roe. The roe enriched the soup and influenced its name.

She Crab Soup

This She-Crab Soup is smooth, creamy, and packed with sweet crabmeat and Lowcountry flair. Everything comes together in one pot for an elegant, comforting meal.
Prep: 15 mins
Cook: 35 mins
Total: 50 mins
Servings: 6
she crab soup in a bowl with a spoon topped with oyster crackers, jumbo lump crab, and a dash of old bay seasoning.

Ingredients

  • 6 tbsp Salted Butter
  • 2 Shallots, diced
  • 2 Celery stalks, diced
  • 5 cloves Garlic, diced
  • 6 tbsp All purpose flour
  • 1 1/2 tsp Old Bay seasoning
  • 1 tsp Black pepper
  • 1 tsp Kosher salt
  • 1 tbsp Lemon zest (more for topping)
  • 1/4 tsp Nutmeg
  • 3 cups Seafood stock
  • 2 cups Heavy cream
  • 2 tsp Hot sauce
  • 2 Bay leaves
  • 1 tbsp Lemon juice
  • 1 lb Jumbo lump crabmeat
  • 4 tbsp Dry sherry
  • Chives, optional for topping

Instructions

  1. Melt the butter in a large, heavy-bottomed pot over medium heat. Add shallots and celery and cook 5–6 minutes until soft and translucent. Add garlic and cook 30–60 seconds until fragrant.
  2. Sprinkle the flour over the vegetables, then add Old Bay, black pepper, kosher salt, lemon zest, and nutmeg. Cook 2–3 minutes, stirring constantly, until the mixture is paste-like and no raw flour remains.
  3. Slowly whisk in the seafood stock, starting with a small splash to smooth the roux, then add the remainder. Stir in heavy cream and hot sauce, and add bay leaves.
  4. Bring to a gentle simmer over low heat and cook uncovered 15–20 minutes, stirring frequently. The soup should thicken slightly and coat the back of a spoon. Avoid a rapid boil to prevent separation.
  5. Remove bay leaves. Purée the soup with an immersion blender or in a food processor until smooth for a silky texture, or skip this step for a chunkier soup.
  6. Return soup to low heat. Toss the crabmeat with 2 tbsp dry sherry in a small bowl. Fold about three-quarters of the crab into the soup and warm 3–5 minutes, stirring gently to keep lumps intact. Reserve some crab for garnish.
  7. Remove from heat and stir in lemon juice and the remaining 2 tbsp sherry. Taste and adjust seasoning. Ladle into bowls and garnish with reserved crab, chopped chives, and extra lemon zest. Add a small splash of sherry to each bowl if desired.

Notes

  • Pick through the crabmeat carefully. Even premium crabmeat may contain small shell pieces—check on a plate before use.
  • Allow seasonings to bloom. Let the roux and spices develop flavor before adding the cream.
  • Adjust salt at the end. Many ingredients contribute saltiness; taste before adding more.
  • Add crab last and gently. Warm just until heated through so jumbo lumps remain visible.
