  • Add remaining 1-2 tbsps of olive oil and 2 tbsps of butter into a cast iron skillet over medium-high heat. Allow the skillet to warm for about 3-5 minutes until butter is melted and shimmering. Place chicken thighs skin side down onto the hot cast-iron skillet and sear until golden brown and crispy, about 3-4 minutes.
