Mini Peach Cobbler Cinnamon Roll Bites Recipe

These Peach Cobbler Cinnamon Roll Bites are gooey, cozy, and delightfully simple to make. Soft, sweet Hawaiian rolls are hollowed, brushed with a cinnamon-brown-sugar butter, filled with warm peach cobbler filling, and finished with a crisp, buttery streusel. The result is a handheld dessert that tastes like a mash-up of skillet peach cobbler and classic cinnamon rolls — and it comes together in under an hour.

I use Hawaiian rolls as the base because they’re tender, slightly sweet, and save a ton of time compared to making rolls from scratch. Hollowing the centers lets the warm peach filling soak into the soft bread, producing a moist, pull-apart texture. A generous brushing of cinnamon-sugar butter gives every bite that unmistakable cinnamon-roll flavor, while the streusel adds the crisp topping that makes it taste like cobbler.

Ingredients Overview

  • Hawaiian Rolls: Soft and slightly sweet, they make an ideal short-cut base for these bites.
  • Fresh Peaches: Use ripe but firm peaches so they soften while cooking without becoming mushy. If peaches are out of season, drained canned peaches in juice work fine.
  • Brown Sugar: Adds a deep, caramel-like sweetness to both the cinnamon butter and the peach filling.
  • Cinnamon: Provides that classic cinnamon-roll note.
  • Salted Butter: Used in the cinnamon butter, the peach filling, and the streusel for a rich, buttery flavor.
  • Cornstarch: Thickens the peach juices so the filling is glossy and not watery.
  • Streusel Topping: A simple mix of flour, sugars, cinnamon, and butter for a crisp crumb topping that amplifies the cobbler character.

How to Make Peach Cobbler Cinnamon Roll Bites

hawaiian rolls in a baking dish with the center of the rolls cut out and covered in cinnamon roll filling.

Prepare the Hawaiian rolls. Keep the pack of rolls connected and place them in an 11×8 baking dish. Using a small, sharp knife, cut a hole into the center of each roll without cutting through the bottom. Remove and reserve the centers for the filling. Brush the tops and inside of each cavity generously with the cinnamon-brown-sugar butter.

Make the peach cobbler filling. In a skillet over medium heat, cook chopped peaches with brown sugar and a splash of lemon juice until the fruit softens and releases juices. Mix cornstarch with water, add it to the peaches, and cook a couple more minutes until the mixture thickens and becomes glossy. Stir in a bit of butter and cinnamon, then fold the reserved bread pieces into the filling so they absorb some of the syrupy juices.

Fill and top the rolls. Spoon the warm peach cobbler filling into each hollowed roll, mounding a bit over the top if desired. Cover all the filled rolls with the streusel mixture, then bake at 350°F for 30–40 minutes, until the tops are golden brown, the streusel is crisp, and the peach filling is bubbling at the edges.

Pro Tips

  • Choose ripe but firm peaches. They should be juicy yet hold their shape during cooking to avoid a watery filling.
  • Don’t cut through the bottoms of the rolls. Leaving the base intact keeps the filling contained and prevents leaks in the baking dish.
  • Save and use the removed bread centers. Tearing or chopping those pieces into the peach filling creates a lovely bread-pudding-like texture and soaks up the syrup.
  • Cook the peach filling until thick and glossy. Cornstarch needs a moment of heat to activate, so be sure the filling thickens before filling the rolls.
  • Brush the cinnamon butter thoroughly. Coat the tops, the sides, and especially the inner cavities so each bite is full of cinnamon-butter flavor.

Easy Peach Cobbler Cinnamon Roll Bites made with Hawaiian rolls, gooey peach filling, cinnamon brown sugar butter, and buttery streusel.

Ingredients

  • 1 pack Hawaiian Rolls

Cinnamon Roll Filling

  • 1/2 cup (113 g) salted butter, melted
  • 1/2 cup (110 g) brown sugar
  • 1 tbsp cinnamon

Peach Cobbler Filling

  • 3 peaches (about 1 lb), chopped
  • 1 tbsp lemon juice
  • 1/2 cup (110 g) brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 tsp cinnamon
  • 1 tbsp salted butter

Streusel Topping

  • 1 1/4 cups (156 g) all-purpose flour
  • 1/2 cup (110 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 tsp cinnamon
  • 1/2 cup (113 g) salted butter, melted

Instructions

  1. Preheat the oven to 350°F. Lightly grease an 11×8 baking dish and place the Hawaiian rolls inside, keeping them connected. Cut a hole in the center of each roll without cutting through the bottom. Remove and reserve the centers.
  2. Make the cinnamon-brown-sugar butter: combine melted butter, brown sugar, and cinnamon. Brush generously over the tops and inside the centers of the rolls.
  3. Prepare the peach filling: in a skillet over medium heat, cook the chopped peaches with lemon juice and brown sugar for 5–7 minutes until softened and juicy.
  4. Whisk cornstarch and water in a small bowl, add to the peaches, and cook 1–2 minutes until thickened and glossy. Remove from heat, stir in butter and cinnamon until melted. Fold the reserved bread centers into the peach mixture to absorb juices.
  5. Spoon the warm peach mixture into each roll, mounding slightly.
  6. Make the streusel: in a bowl, mix flour, brown sugar, granulated sugar, and cinnamon. Pour in the melted butter and stir until crumbly pieces form. Sprinkle evenly over the filled rolls.
  7. Bake 30–40 minutes until the streusel is golden and crisp and the filling is bubbling around the edges. Let cool slightly before serving. Serve warm, optionally with ice cream or whipped cream.

Notes

  • Peach selection: Firm, ripe peaches hold up better during cooking; very soft fruit can make the filling too runny.
  • Keep the roll bottoms intact: This prevents the filling from leaking and keeps the bites neat.
  • Use the bread centers: Mixing them into the filling creates a pleasing, pudding-like interior that soaks up the peach syrup.
  • Consistency: Ensure the peach filling is thick and glossy before filling the rolls; cornstarch needs heat to fully thicken.
