  1. Cut each corn cobs into 3 pieces. Sprinkle a little olive oil into a large pot over medium-high heat. Add corn to the pot in a single layer, searing on all sides for about 3-5 minutes to get a nice char. (Don’t overcrowd the pan; cook in batches if needed).
  2. Add 1 cup of water to the bottom of the pot, then cut 1 stick of butter into 1-inch pieces and place on top of the corn. Season with salt and black pepper and cover with a lid. Reduce to medium heat and let everything cook for 15-20 minutes, until the corn is tender.
  3. Remove the lid and continue to cook uncovered for about 5-7 minutes, until most of the water has evaporated. Add in diced garlic, 1 tbsp of Cajun seasoning, onion powder.
