Instructions

  1. Preheat oven to 425 degrees Fahrenheit (220°C).
  2. Cut spaghetti squash in half lengthwise and scoop out the seeds and pulp. Place on a baking sheet, cut-side up. Drizzle with olive oil, season with salt and pepper, and place one whole garlic clove inside each half. Flip the squash over onto the baking sheet so it is cut-side down. Bake for 45 minutes, or until tender.
  3. While the squash bakes, prepare the chicken. Cut chicken breasts into cubes and season with salt, pepper, onion powder, and a pinch of red pepper flakes.
  4. Heat a large skillet over medium-high heat with 2 tablespoons of butter and a drizzle of olive oil. Add chicken cubes and sliced mushrooms to the skillet. Cook until the chicken is browned on all sides and cooked through, and the mushrooms are tender. Remove chicken and mushrooms from the skillet and set aside.
  5. In the same skillet (add more butter/oil if needed), add the chopped garlic and fresh thyme. Cook over medium-low heat until fragrant, about 3 minutes.
  6. Sprinkle flour into the skillet and mix with the aromatics, cooking for 2-3 minutes to form a loose paste (roux).
  7. Gradually add heavy cream, whisking constantly until the sauce begins to thicken. Stir in the grated Parmesan cheese until melted and smooth.
