Ingredients

  • 2 lbs Catfish Fillets
  • 1 cup Buttermilk
  • 1 tbsp Hot Sauce
  • 1 tbsp Yellow Mustard
  • 1 tsp Old Bay
  • 1 tsp Cajun Seasoning

Breading Mixture

  • 1 cup All Purpose Flour
  • 1 cup Fine Ground Cornmeal
  • 1 tbsp Old Bay
  • 2 tsp Cajun Seasoning
  • 1 1/2 tsp Onion Powder
  • 1 1/2 tsp Garlic Powder
  • 1/2 tsp Black Pepper

Creole Tartar Sauce

  • 1/2 cup Mayo
  • 2 tbsp Relish
  • 2 tbsp Lemon Juice
  • 1 tbsp Hot Sauce
  • 1 tbsp Yellow Mustard
  • 1 1/2 tsp Cajun Seasoning
  • 1 tsp Sugar
  • 1/2 tsp Garlic Powder
  • 4-5 cups Vegetable Oil (or any neutral oil)

Instructions

  • Pat the catfish dry and cut into 1½- to 2-inch nuggets. Place in a bowl with buttermilk and hot sauce, toss to coat, cover, and refrigerate 30 minutes.
  • While the fish marinates, make the Creole tartar sauce by stirring together mayonnaise, relish, mustard, Cajun seasoning, sugar, garlic powder, hot sauce, and lemon juice. Chill until ready to serve.
  • Drain the buttermilk and mix the drained fish with yellow mustard, Old Bay, and Cajun seasoning. Do not rinse. Drain thoroughly — the fish should be moist but not dripping.
