Ingredients

  • 2 lbs Shrimp, peeled and deveined
  • 3 sprigs Fresh Rosemary, chopped
  • 2 sprigs Fresh Thyme, chopped
  • 2 tbsps Fresh Parsley, chopped
  • 5 cloves Garlic, chopped
  • 1/4 Yellow Onion, chopped
  • Dash of Red Pepper flakes
  • 2 tsp smoked Paprika
  • Salt and Pepper, as desired
  • 4 tbsps Butter
  • 3 tbsps Olive Oil
  • 4-5 slices Sourdough Bread

Whipped Feta

  • 1 1/2 cups Feta (crumbles or whole block)
  • 1/4 cup Cream Cheese
  • 1 Lemon, zested and juiced
  • 3 tbsp Fresh Dill, chopped (optional, for extra freshness)
  • Salt, as desired

Instructions

  1. Season the shrimp with salt, pepper, red pepper flakes, and smoked paprika. Set aside. Then chop up garlic, fresh herbs (rosemary, thyme, parsley), and 1/4 of an onion.
  2. Add a little olive oil and butter to a Calphalon cast iron skillet. Let the oil get warm and add onion. Sauté for about 3 minutes, then add chopped garlic and fresh herbs. Continue to sauté for another minute, then add shrimp to the skillet. Brown shrimp on both sides and cook until opaque and done (about 1-2 minutes per side).
  3. For the whipped feta: Add feta, cream cheese, lemon zest and juice, and salt (and fresh dill if using) to a food processor and mix together until creamy and smooth. Spread this on a plate and layer with the cooked shrimp.
  4. Toast Sourdough Bread until golden and crispy. Serve the shrimp and whipped feta with the toasted sourdough bread and enjoy immediately!
