Pumpkin spice donuts are a quintessential fall treat, offering the warm, comforting flavors of the season. These homemade donuts are moist, soft, perfectly fried, then coated in cinnamon sugar. Prepare to fall in love with these delightful autumn treats!

  • Electric Mixer (hand mixer or stand mixer)
  • Mixing Bowls (large and medium)
  • 3-inch biscuit cutter or Donut Cutter
  • Rolling Pin
  • Deep-fry thermometer
  • Slotted Spoon or Spider
  • Wire Rack

Ingredients

  • 3 cups Cake Flour
  • 1/2 cup Pumpkin Puree (moisture blotted)
  • 1 1/2 tbsp Pumpkin Pie Spice
  • 2 tsp Baking Powder
  • 3/4 tsp Kosher Salt
  • 3 tbsps Salted Butter, room temperature
  • 2/3 cup Brown Sugar (packed)
  • 2 Egg Yolks
  • 1 tsp Vanilla Extract
  • 3/4 cup Sour Cream
  • 4 cups Vegetable Oil, for frying (or as needed for 2-3 inches depth)

For the Cinnamon Sugar Coating:

  • 1/2 cup Granulated Sugar
  • 1 tbsp Pumpkin Pie Spice

Instructions

  1. Prepare Pumpkin Puree: Spread the pumpkin puree onto a plate. Place several paper towels on top of the puree and press down firmly to remove excess moisture. Continue blotting with fresh paper towels (this may take up to 5-6) until the puree is thick and paste-like and the paper towel is almost dry.
  2. Combine Dry Ingredients: In a medium bowl, sift together the cake flour, pumpkin pie spice, baking powder, and kosher salt. Set aside.
  3. Cream Wet Ingredients: In a separate large mixing bowl, beat room temperature salted butter with a hand mixer on medium speed for 2 minutes until light and fluffy. Add the brown sugar and continue to mix for 3 minutes until well combined. Scrape down the sides of the bowl. Then, add the blotted pumpkin puree, egg yolks, and vanilla extract. Mix until just combined, about 2 minutes.
  4. Form the Dough: Gradually add half of the sour cream to the wet mixture and mix gently. Then, add half of the flour mixture, folding it in with a flat spatula until just combined. Repeat with the remaining sour cream and flour mixture. Mix until all ingredients are fully incorporated and no dry streaks remain, being careful not to overmix. The dough should be slightly firm.
  5. Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least one hour, or preferably overnight, until it is firm and easy to handle.
  6. Roll and Cut Donuts: Generously flour a clean work surface and your rolling pin. Roll the chilled dough out until it’s about ½ inch thick. Use a 3-inch biscuit cutter or donut cutter to cut out donut shapes. For the center holes, use a small circular cutter (a soda bottle cap is often the perfect size!). Gather and gently re-roll the dough scraps, cutting out more donuts until all the dough is used. Place the cut donuts onto a parchment-lined baking sheet and refrigerate uncovered for another 20 minutes to firm up.
  7. Prepare Cinnamon Sugar Coating: In a shallow dish, mix together the granulated sugar and 1 tablespoon of pumpkin pie spice for the coating. Set aside.
  8. Fry the Donuts: Add vegetable oil to a large pot or Dutch oven (or any deep pan) to a depth of 2-3 inches. Heat the oil to 350°F (175°C), monitoring with a deep-fry thermometer. Carefully add 2-3 donuts to the hot oil at a time, ensuring not to overcrowd. Fry each side for about 2-3 minutes, until they turn a beautiful deep golden brown. Remove the fried donuts from the oil and place them onto a wire rack set over paper towels to drain any excess oil.
  9. Coat Donuts: Allow the donuts to cool for about 1 minute on the wire rack – they should still be warm. While warm, dunk both sides of each donut into the prepared cinnamon sugar mixture, ensuring a generous and even coating. Serve immediately and enjoy!

Notes

  • Do Not Overmix Your Batter. Overmixing can develop the gluten in the flour too much, leading to dense and tough donuts. For a light and tender texture, mix the batter just until the ingredients are combined and no streaks of flour remain.
  • Chill the Dough Thoroughly. Allow the dough to chill for at least an hour, or even overnight. This step firms up the dough and hydrates the flour, making it much easier to roll out and shape, and helps the donuts maintain their structure during frying, resulting in a superior texture.
  • Fry at the Right Oil Temperature. Heat the oil to precisely 350°F (175°C) for optimal results – always use a candy thermometer to keep a close eye on the oil temperature. If the oil is too low, the donuts will absorb excess oil and become greasy; if it’s too high, they will burn on the outside while remaining raw inside.
  • Use Fresh Oil. Starting with fresh oil ensures a clean flavor and proper frying. Reusing old oil can result in an unpleasant off-taste and negatively affect the donuts’ texture and color.
  • Dust in Cinnamon Sugar While Warm. Coating the warm donuts in the cinnamon sugar mixture helps the sugar adhere better to the surface, creating a delicious, glistening, and perfectly spiced crust.
  • Consider Donut Holes: Don’t throw away the centers! Fry them for a shorter time (about 1-2 minutes per side) and coat them in the cinnamon sugar for delightful bite-sized treats.

Substitutions:

  • Pumpkin Puree: If you don’t have pumpkin puree, you can omit it entirely. Simply increase the amount of sour cream to 1 cup (as opposed to 3/4 cup) to maintain moisture. This is the perfect way to enjoy a spiced cake donut without needing to head to the grocery store for pure pumpkin.
