This peach galette gives you all the amazing flavors of a homemade pie but without the fussy homemade pie crust! Rustic and delicious.

Ingredients

  • 4-5 Peaches
  • 1/2 cup Brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 egg
  • 1 sheet Puff pastry
  • 1 tablespoon apricot preserves, optional
  • Coarse sugar, optional, for sprinkling

Instructions

  • Preheat your oven to 425 degrees F (220 degrees C).
  • In a small bowl, mix together the brown sugar, cinnamon, nutmeg, ginger, cornstarch, and salt until well combined.
  • In a large bowl, toss the sliced peaches with lemon juice and vanilla extract. Then, add the brown sugar mixture and toss gently to coat the peaches evenly. Let the peaches sit for 10 minutes to macerate and release some juices.

  • Arrange the peach slices onto the center of the puff pastry, leaving about a 1-inch space clear on all sides. (Pro Tip: Be sure to leave as much of the accumulated peach syrup behind in the bowl as possible when transferring the peaches. Excess syrup can make the pastry soggy. You can spoon this syrup over the baked galette later if desired!)
  • Carefully wrap or fold the edges of the puff pastry up and around the peaches, creating a rustic border. Beat an egg in a small bowl to create an egg wash, then brush the folded edges of the puff pastry. Optionally, sprinkle with coarse sugar for added crunch and sparkle.
