The inspiration for this intensely flavorful Salted Caramel Chocolate Tart emerged from a deeply meaningful collaboration for Eat The Culture’s annual Black History Month Virtual Potluck. This year’s inspiring theme, “Afrofuturism,” resonated deeply, inviting a creative exploration of Black foodways through a lens that merges history, imagination, and future possibilities. It was an honor to contribute to this vibrant project alongside over 30 talented Black food bloggers, each bringing their unique culinary vision to the table.
Afrofuturism: Merging the Past, Present, and Future Through Food
Afrofuturism, a multifaceted cultural aesthetic, is an exploration of Black identity, culture, and experience through the intersection of imagination, technology, liberation, and the reimagining of the future. In the culinary context, it invites us to look at Black food through a unique lens, considering its rich history, present innovations, and its potential evolution for generations to come. This Virtual Potluck specifically delves into Black food through the principles of Afrofuturism, showcasing how our collaborative recipes weave together the diverse threads of the Black diaspora, celebrating culture, geopolitics, and technological advancements within our culinary traditions.

For me, personally, embracing the Afrofuturism theme meant intentionally connecting with the culinary traditions of my ancestors. It involved integrating the foundational foods and cooking techniques passed down by my grandparents and great-grandparents with the recipes my mother lovingly taught me. Then, it became about infusing these traditions with my own unique culinary perspective, creating something new yet deeply rooted. Ultimately, this journey of culinary Afrofuturism extends beyond my kitchen, envisioning the dishes my children will one day prepare for their own families, carrying forward a legacy that evolves with each generation.
While developing this Salted Caramel Chocolate Tart, I found myself reflecting on my baby boy and the culinary heritage I wish to pass on to him. It was a beautiful, heartwarming thought – picturing him in his own kitchen, perhaps adapting my recipes, adding or subtracting ingredients to suit his future palate, and making them his own. This intergenerational connection through food truly brings the concept of Afrofuturism to life, demonstrating how our culinary traditions are living, breathing entities that adapt and thrive through time.

Chocolate Salted Caramel Tart: Where West African Influence Meets American Decadence
The creation of this Chocolate Salted Caramel Tart is a delicious testament to the rich tapestry of global food history, particularly highlighting the profound influence of West African ingredients. Peanuts, a versatile and vital crop, are a staple in countless African cuisines, appearing in everything from hearty stews and savory curries to sweet, comforting desserts. Similarly, the cacao bean, the very essence of chocolate, finds its primary home in West Africa, where it is cultivated and harvested, eventually making its way into the world’s most beloved confections.
My goal with this salted caramel chocolate tart was to honor these foundational ingredients by weaving them into a beloved American dessert format. By merging the earthy richness of peanuts and the deep, complex flavors of cacao with the familiar comfort of a graham cracker crust and a luscious caramel, I created a dessert that is both an homage to culinary origins and a celebration of modern decadence. It’s a sweet fusion that brings together the best of both worlds, creating a unique and deeply satisfying flavor profile.

Essential Ingredients for the Chocolate Salted Caramel Tart
Crafting this incredible salted caramel chocolate tart requires a selection of readily available ingredients, ensuring that this gourmet experience is accessible to every home baker. Each component plays a vital role in building the tart’s harmonious layers of flavor and texture. Here’s a breakdown of what you’ll need for each decadent section:
For the Crispy Graham Cracker Crust
- **Vanilla Extract:** Adds a warm, aromatic depth that elevates the simple graham cracker flavor.
- **Graham Crackers:** The star of our no-bake crust, providing a sweet, slightly honeyed, and perfectly crumbly texture.
- **Butter:** Melted butter is crucial for binding the graham cracker crumbs together, creating a firm yet tender crust that holds its shape.
- **Granulated Sugar:** Enhances the sweetness of the graham crackers, balancing the saltiness of the other layers.
- **A Pinch of Salt:** A small but mighty ingredient that amplifies all the other flavors in the crust.

For the Luscious Salted Caramel Layer
- **Granulated Sugar:** The foundation of our rich caramel, transforming into a deep amber liquid when heated.
- **Butter:** Adds richness and helps to create a smooth, emulsified caramel.
- **Heavy Cream:** Essential for achieving that signature creamy, pourable caramel consistency.
- **Peanuts:** Folded into the caramel, they provide a delightful crunch and a robust, earthy flavor that complements the sweet and salty notes.
- **Salt:** Crucial for balancing the sweetness of the caramel, creating that irresistible “salted caramel” magic.
For the Velvety Chocolate Ganache Layer
- **Dark Chocolate Chips:** The quality of your chocolate makes a difference here. Dark chocolate provides a rich, deep cocoa flavor that isn’t overly sweet, perfect for balancing the caramel.
- **Heavy Cream:** When warmed and mixed with chocolate, it creates a gloriously smooth, glossy, and indulgent ganache.

As an optional, yet highly recommended, decorative flourish, I sometimes prepare a light and airy meringue to crown this tart. Think of it as the elegant “icing on the cake” – or rather, the tart! If you choose to embark on this extra step, you’ll simply need a few basic ingredients: fresh egg whites, granulated sugar, and either a touch of cream of tartar or white vinegar. Don’t worry about the vinegar; its taste completely disappears during the whipping process, leaving only a stable, glossy meringue. The exact quantities for this optional topping are included in the comprehensive recipe card below.
One of the most appealing aspects of this dessert, particularly for those who prefer to keep their oven off, is that this entire salted caramel chocolate tart is a **no-bake recipe**. That’s right – no oven required! This makes it a fantastic option for warmer weather, busy schedules, or simply when you’re looking for a fuss-free yet impressive dessert.

How to Make the Perfect Chocolate Salted Caramel Tart
Creating this show-stopping dessert is surprisingly straightforward, thanks to its no-bake nature and well-defined layers. Follow these simple steps to assemble your very own Chocolate Salted Caramel Tart:
- **Prepare the Graham Cracker Crust:** Begin by combining the graham crackers and sugar in a food processor. Pulse until you achieve fine, uniform crumbs. Slowly drizzle in the melted butter, vanilla extract, and a pinch of salt. Continue to pulse until the mixture resembles wet sand – this is the perfect consistency for a sturdy crust. Transfer these buttery crumbs into a 9-inch tart pan and firmly press them against the bottom and up the sides to form an even crust. For best results and to ensure it sets properly, place the prepared crust in the freezer for at least 15-20 minutes while you prepare the next layer.
- **Craft the Salted Caramel Layer:** In a deep, heavy-bottomed saucepan, add the granulated sugar. Place it over medium-low heat. Allow the sugar to melt gradually, stirring occasionally to prevent burning, until it transforms into a beautiful amber-colored liquid. This caramelization process is key to its deep flavor.
- **Complete the Caramel & Add Peanuts:** Once the sugar is fully melted and caramelized, reduce the heat to low. Carefully add the butter, stirring continuously until it’s completely melted and incorporated. Next, slowly pour in the heavy cream while whisking vigorously. Don’t be alarmed if the caramel seizes and breaks apart – this is a normal reaction. Simply continue whisking. If necessary, gently increase the heat back to medium-low and whisk until the caramel comes back together, becoming smooth and luscious. Remove the saucepan from the heat and gently fold in the peanuts, ensuring they are evenly distributed throughout the caramel. Allow the caramel to cool for about 10-15 minutes, then pour it over the chilled graham cracker crust. Return the tart to the freezer to set for another 30 minutes, or until firm.
- **Assemble the Chocolate Ganache Layer:** For the decadent chocolate ganache, warm the heavy cream in a saucepan over low heat. It should be warm to the touch but not boiling – just gently heated. Remove from heat and immediately add the dark chocolate chips. Let it sit for a minute, then whisk continuously until the chocolate is completely melted and the mixture is smooth, glossy, and slightly thickened. Pour this luxurious ganache evenly over the set caramel layer. Transfer the tart to the refrigerator and allow it to chill for a minimum of 2-3 hours, or preferably overnight, to ensure all layers are perfectly set.
- **Optional Meringue Topping:** If you decide to add the meringue, it’s a simple process. Using a hand mixer or a stand mixer with the whisk attachment, begin whipping the egg whites on medium speed until they become frothy and bubbly. Gradually, very slowly, add the granulated sugar, continuing to whip until stiff, glossy peaks form. While whisking, incorporate the vanilla extract and either cream of tartar or white vinegar – these acidic components help stabilize the meringue. Once your meringue is ready, transfer it to a piping bag (I recommend using a Wilton 4B piping tip for beautiful stars) and pipe decorative patterns or swirls over the chilled tart.
- **Garnish and Serve:** For the final flourish, coarsely chop some additional candied peanuts and sprinkle them generously over the top of the tart, especially if you opted out of the meringue. This adds extra crunch and visual appeal. Slice and serve this magnificent Chocolate Salted Caramel Tart, and prepare for rave reviews!

Salted Caramel Chocolate Tart with Candied Peanuts
Ingredients
Graham Cracker Crust
Caramel Layer
Chocolate Ganache
Meringue, optional
Candied Peanuts
Instructions
-
Add graham crackers, sugar, and a pinch of salt to a food processor and pulse until crumbly. Slowly add melted butter and vanilla extract, continuing to pulse until the texture resembles wet sand. Press this mixture firmly into a tart pan, ensuring the crust is evenly distributed across the bottom and sides. Place in the freezer to chill while preparing the caramel.
-
In a large, deep saucepan, add the sugar and place over medium-low heat. Stir occasionally until all the sugar has completely melted and turned a rich, golden brown. Reduce the heat to low and add the butter, stirring until it’s fully melted. Next, slowly pour in the heavy cream while whisking continuously. The caramel mixture may seize or break apart at this stage; do not fret. Continue whisking, and if needed, slightly increase the heat to medium until the mixture becomes smooth and comes back together. Remove from heat.
-
Stir in the salt and fold in the peanuts until well combined. Allow the caramel to cool for approximately 10-15 minutes to thicken slightly, then pour it evenly over the chilled graham cracker crust. Return the tart to the freezer to set for another 30 minutes, ensuring the caramel becomes firm.
-
To prepare the chocolate ganache layer, heat the heavy cream in a saucepan over low heat for about 2-3 minutes; do not allow it to boil. Remove from heat and add the dark chocolate chips. Whisk together continuously until the chocolate has fully melted and the mixture is smooth and glossy. Pour this ganache over the caramel layer in the tart. Place the tart into the refrigerator and allow it to set for 2-3 hours, or until firm enough to slice.
-
*(Optional step: Meringue)* To make the meringue, use a hand mixer or stand mixer with a whisk attachment. Add the egg whites to a clean, dry bowl. Beat on medium speed until the egg whites become frothy and bubbly. Slowly, in a steady stream, add the granulated sugar, continuing to beat until stiff, glossy peaks form. While whisking, incorporate the vanilla extract and cream of tartar (or white vinegar) to stabilize the meringue. Transfer the meringue to a piping bag fitted with your desired tip (e.g., Wilton 4B star tip) and pipe decorative swirls or peaks on top of the chilled tart just before serving.
-
Chop up the candied peanuts (if using) and garnish generously on top of the tart, especially if you skipped the meringue, for added crunch and visual appeal. Serve chilled and enjoy!
