The magic lies in the slow cooking process, which allows each ingredient to meld beautifully, delivering maximum flavor with minimal fuss. It’s the very essence of old-school Southern comfort, made effortlessly.
  • Effortless Side Dish with Minimal Active Cooking: The beauty of the slow cooker is its ability to do all the heavy lifting for you. This hands-off approach makes it the perfect simple side dish for busy weeknights or for freeing up your time when hosting larger gatherings. Who doesn’t appreciate a recipe that makes cooking feel easy and enjoyable?
  • Tender, Seasoned Green Beans That Get Better with Time: The prolonged cooking time ensures your fresh green beans become wonderfully tender, soaking up all the rich, smoky broth and seasonings. Even better, like many classic comfort foods, the flavors deepen overnight, meaning leftovers are often even more delicious. It’s truly a win-win situation for your taste buds!
  • Budget-Friendly, Hugely Comforting, and Feeds a Crowd: Smoked turkey legs are a cost-effective way to infuse immense flavor into a dish, making this recipe incredibly budget-friendly. Key Ingredients for Flavorful Slow Cooker Green Beans

(For a complete list of precise measurements, please refer to the detailed recipe card at the bottom of this post.)

  • Fresh Green Beans: The star of our dish! Using fresh green beans is crucial here, as they maintain their appealing shape and develop a perfectly tender (but never mushy) texture after hours in the slow cooker. They act like sponges, soaking up every drop of that savory, smoky broth and becoming wonderfully buttery soft and flavorful.
  • Smoked Turkey Legs: This is where the magic happens! Smoked turkey legs are the secret weapon, providing a rich, deep, and savory smokiness that permeates the entire pot. As they slowly cook, the meat becomes incredibly tender, falling off the bone and breaking down into juicy shreds that make the green beans hearty, substantial, and bursting with flavor. They are a fantastic, economical alternative to ham hocks while still delivering authentic Southern taste.
  • Onion & Garlic: These aromatic powerhouses form the essential flavor foundation of our dish. As they cook low and slow in the broth, they soften and almost melt, releasing their sweet and pungent notes to build a complex, irresistible base for the green beans.
  • Chicken Broth: The liquid backbone! Chicken broth adds significant depth and savory richness that water simply cannot replicate. We recommend using low-sodium chicken broth, as smoked turkey can be quite salty, allowing you to better control the overall seasoning of the dish.
  • Seasoning Blend (Black Pepper, Cajun Seasoning, Onion Powder, Garlic Powder): This carefully chosen blend is designed to “wake up” the beans and complement the natural smokiness of the turkey. While smoked turkey provides some inherent salt, these spices add layers of warmth, a touch of spice, and enhanced savory notes, ensuring every bite is perfectly balanced and exciting.
  • Butter: A touch of butter goes a long way in enriching the flavors and rounding out the smokiness. It adds a luxurious, velvety finish to the broth, making the green beans even more indulgent and comforting.
  • Worcestershire Sauce and Apple Cider Vinegar (just a splash): These two ingredients are your secret weapons for brightening and balancing the entire dish right at the end. The Worcestershire adds an umami depth, while the apple cider vinegar provides a subtle tang that lifts the flavors, cuts through the richness, and prevents the dish from feeling heavy. A small amount makes a huge difference!

How To Make Slow Cooker Green Beans

trimmed green beans on a cutting board.

Step 1: Prepare the Green Beans. Begin by trimming your fresh green beans. This involves snapping or cutting about 1/4 inch off each end, primarily to remove the tough, stringy bits. Once trimmed, place all the prepared green beans evenly into the bottom of your slow cooker. This forms the base layer for our flavorful dish.

Step 2: Sear the Smoked Turkey Legs. In a large, heavy-bottomed skillet, add a drizzle of olive oil and heat it over medium-high heat until shimmering. Carefully place the smoked turkey legs in the hot skillet and sear them for approximately 3 minutes per side, or until beautifully browned. This crucial step develops a richer, deeper smoky flavor and creates a delicious crust. Once seared, remove the turkey legs and transfer them to the slow cooker, placing them on top of the green beans.

Step 3: Build the Flavorful Broth. Using the same skillet from searing the turkey (don’t clean it, those browned bits are flavor gold!), add your chopped yellow onions. Sauté for about 5 minutes, stirring occasionally, until they begin to soften and become translucent. Next, add the diced garlic cloves, butter, garlic powder, onion powder, red pepper flakes, a touch of brown sugar, seasoned salt (start light, as smoked turkey can be salty), and black pepper. Continue cooking for another 3 minutes, stirring constantly to prevent burning and to scrape up all those delicious browned bits from the bottom of the pan. Finally, pour in the chicken broth and the beefy French onion soup mix. Stir thoroughly until all the ingredients are well combined and the soup mix has dissolved, creating a rich and aromatic broth.

Step 4: Slow Cook to Perfection. Carefully pour the entire chicken broth mixture from the skillet over the green beans and smoked turkey legs in the slow cooker. Ensure that the turkey legs are mostly submerged in the liquid; it’s okay if the green beans aren’t completely covered, as they will steam and absorb flavor beautifully. Place the lid securely on your slow cooker and cook on the LOW setting for 6-7 hours. The dish is ready when the green beans are incredibly tender and the smoked turkey meat is literally falling off the bone.

Step 5: Finish and Serve. Once the cooking time is complete and the turkey is tender, carefully remove the smoked turkey legs from the slow cooker. Allow them to cool slightly, then shred the meat from the bones, discarding any skin or bones. Return the succulent shredded turkey meat back into the slow cooker with the green beans. Stir in the apple cider vinegar and Worcestershire sauce for that final brightening touch, and if you like a little heat, add a splash of your favorite hot sauce. Give it a final taste test and adjust any seasonings if necessary. Serve hot and enjoy the incredible flavors of this Southern-inspired comfort food!

Pro Chef Tips for the Best Southern Green Beans

  • Don’t Skip Searing the Turkey Legs (If Time Allows): While optional, taking an extra 3-5 minutes to brown your smoked turkey legs in a hot skillet before adding them to the slow cooker is a game-changer. This quick sear caramelizes the exterior of the turkey, awakening and concentrating all that incredible smoky flavor. It creates a richer, deeper base for your broth, resulting in a more complex and satisfying dish. Trust us, it’s worth the extra step!
  • Taste and Adjust Seasoning as You Go: Smoked meats, especially turkey, can vary significantly in their saltiness. Therefore, it’s crucial to taste your broth and green beans before the final serving. While the turkey brings a lot of savory flavor, your green beans will likely benefit from additional black pepper, and sometimes a tiny pinch of brown sugar can help balance the smokiness and acidity beautifully. Adjust seasoning gradually until it tastes perfect to you.
  • Shred the Meat Off the Bone Before Serving: Once the turkey legs have cooked down and are incredibly tender, remove them from the slow cooker. Allow them to cool slightly, then easily pull the juicy meat off the bones, discarding the bones and any tough skin. Stir this shredded, flavorful turkey meat back into the pot with the green beans. This step ensures that every spoonful of green beans is accompanied by tender, savory turkey, creating that essential hearty, “pot-likker” vibe that defines classic Southern green beans.
  • Never Drain the Pot Likker – It’s Liquid Gold!: That smoky, savory cooking liquid (often called “pot likker” in Southern cuisine) is absolutely packed with flavor and nutrients. Do not, under any circumstances, drain it! Instead, spoon plenty of this delicious broth over your green beans when serving. It’s fantastic over rice, mashed potatoes, or even as a dipping sauce for your cornbread. Consider it liquid seasoning that ties the whole meal together.
  • Use Fresh Green Beans for Best Texture: While frozen or canned green beans can be used in a pinch, fresh green beans truly deliver the best texture for this recipe. They hold their shape better and achieve that perfect tender-but-not-mushy quality that is characteristic of Southern-style green beans. If you do use frozen, reduce cooking time; if using canned, add them towards the end of the cooking process.

Recipe FAQs

Can I use canned green beans?

While fresh green beans are recommended for the best texture, you can use canned green beans. However, they tend to be much softer and can become mushy if cooked for the full duration. If using canned, we suggest adding them only during the last hour of cooking. First, slow cook the smoked turkey, onions, and broth as directed, then stir in the drained canned green beans towards the end to simply heat them through and allow them to absorb some of the rich flavors.

Can I use frozen green beans instead of fresh?

You *can* substitute frozen green beans, but for that truly tender, silky, and authentic Southern-style texture, fresh green beans are superior. Frozen beans often release more water and can break down faster, becoming softer than desired. If you opt for frozen, reduce the cooking time by approximately 1-2 hours and keep an eye on their tenderness to prevent overcooking.

Can I substitute smoked turkey with ham hocks or bacon?

Absolutely! Smoked ham hocks are a traditional Southern choice and work beautifully, imparting a similar rich, smoky flavor. If using ham hocks, cook them in the same manner as the turkey legs. Bacon also adds fantastic flavor; simply cook it until crispy before adding it to the slow cooker (you can even use some of the rendered bacon fat to sauté the onions for an extra layer of flavor!). Smoked turkey is a great option for those looking for a slightly leaner protein while still achieving that deep, cozy taste.

Do I need broth, or can I just use water?

While you can use water, chicken broth significantly enhances the depth and richness of the final dish. The smoked turkey already provides a good amount of seasoning and flavor, so you don’t necessarily need a full pot of broth if you’re concerned about sodium, but using some broth will undeniably boost the overall taste profile and create a more savory “pot likker.” Opt for low-sodium broth to have better control over the salt content.

Can I make this ahead of time?

Yes, absolutely! This slow cooker green bean dish reheats wonderfully. In fact, like many braised and slow-cooked recipes, the flavors tend to meld and deepen even further overnight, making it taste even better the next day. You can easily reheat it on the stovetop over low heat or simply pop the leftovers back into the slow cooker on a warm setting until heated through.

My broth is salty, how do I fix it?

The saltiness of smoked meats can vary greatly between brands and types. If you find your broth is too salty, there are a few simple fixes. You can add more water or unsalted chicken broth to dilute the saltiness. Another effective trick is to add a peeled, raw potato cut in half to the slow cooker during the last hour of cooking. The potato will absorb some of the excess salt; just remember to remove it before serving!

Slow cooker green beans with smoked turkey are tender, incredibly flavorful, and infused with rich Southern charm. This easy side dish is perfect for holidays, Sunday dinner, or any occasion craving comforting taste!

Equipment

  • Slow Cooker
  • Skillet
  • Cutting board

Ingredients

  • 2 lbs Fresh Green Beans
  • 1 tbsp Olive Oil
  • 2 lbs Smoked Turkey Legs
  • 1 large Yellow Onion, (chopped)
  • 4 cloves Garlic, (diced)
  • 2 tbsp Salted Butter
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Red Pepper Flakes
  • 1/2 tbsp Brown Sugar
  • 1/2 tsp Seasoned Salt, (more or less as desired *start light with salt as the smoked turkey legs can be a bit salty)
  • 1 tsp Black Pepper
  • 4 cups Chicken Broth
  • 1 packet Beefy French Onion Soup Mix
  • 2 tsp Apple Cider Vinegar
  • 2 tsp Worcestershire Sauce
  • Hot Sauce, (to serve), optional

Instructions

  1. Trim the fresh green beans by cutting about 1/4 inch off of each green bean to remove the chewy stringy bits. Place into the bottom of the slow cooker.
  2. In a large skillet, add a drizzle of olive oil over medium heat. Sear the smoked turkey legs for about 3 minutes per side until nicely browned. Remove and place into the slow cooker.
  3. To the same skillet, add chopped yellow onions and cook for 5 minutes until slightly softened. Then add garlic cloves, butter, garlic powder, onion powder, red pepper flakes, brown sugar, seasoned salt, and black pepper. Continue to cook for 3 minutes, stirring constantly and scraping up the browned bits on the bottom of the pan (this is all the flavor!). Pour in chicken broth and Beefy French Onion Soup Mix and stir until everything is combined.
  4. Pour the onion/chicken broth mixture into the slow cooker on top of the green beans and turkey. Ensure that the turkey legs are submerged; the green beans don’t need to be completely covered.
  5. Cover with a lid and cook on low for 6-7 hours, or until the meat is falling off of the bone and the green beans are very tender.
  6. When the meat is separating easily from the bone, remove the turkey from the slow cooker and shred the meat, discarding the bone and any skin. Add the shredded meat back into the slow cooker. Stir in the apple cider vinegar and Worcestershire sauce, and a splash of hot sauce if desired. Serve warm.

Notes

Sear your turkey legs first (optional, but SO worth it). If you’ve got 3 extra minutes, brown the smoked turkey legs in a hot skillet before adding them to the slow cooker. It wakes up all that smoky flavor and gives your broth a richer, deeper base, significantly enhancing the overall taste.

Taste as you go. The smoked turkey can bring a lot of salt to the dish, so always taste the broth before making final seasoning adjustments. Your green beans might still benefit from a little extra black pepper or even a pinch of brown sugar to perfectly balance the flavors. Every brand of smoked turkey is different, so adjusting to your preference is key.

Pull the meat off the bone before serving. Once the turkey legs are tender and easily separated, remove them from the pot, shred the meat, discard the skin and bones, and stir the juicy meat back into the slow cooker. This ensures a hearty and satisfying texture in every bite and contributes to that delicious “pot-likker” flavor.

Don’t drain the liquid, serve with it! That smoky, savory broth is pure gold and a fundamental part of Southern green beans. Spoon plenty of it over your beans, especially if serving with rice or cornbread, as it’s essentially liquid seasoning that enhances the entire meal.
