Poke Nachos combine crispy chips with marinated sushi-grade ahi tuna and a variety of toppings like jalapenos and avocados. Serve this flavorful dish as an appetizer, snack, or light meal!

Ingredients

  • 1 lb ahi tuna (sushi-grade)
  • 2 tbsp shoyu soy sauce
  • 2 tbsp ponzu sauce
  • 1 tbsp sesame oil
  • 1 tbsp lime juice (freshly squeezed)
  • Wonton Wrappers or Tortilla Chips (for base)

Yum Yum Sauce

  • 1/2 cup Mayo (Kewpie recommended)
  • 2 tbsp butter, melted
  • 1 tbsp ketchup
  • 1 tbsp rice wine vinegar
  • 2 garlic cloves, grated
  • 1 tsp sugar
  • 2 tbsp water (or more, to adjust consistency)
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • salt, to taste

Toppings (optional)

  • Avocado, diced
  • Sesame Seeds
  • Cilantro, chopped
  • Jalapeños, sliced
  • Cucumber, cut into chunks
  • Seaweed, sliced thinly
  • Crispy Onions
  • Green Onions, sliced
  • Garlic Crisps

Instructions

  1. Prepare Wonton Chips (if using): If opting for wonton wrappers, heat about 2 cups of oil to 350°F (175°C) in a deep pot. Cut the wonton wrappers into triangles and fry them in small batches to avoid overcrowding the pan. Fry until they are golden brown and crispy, then remove them onto a paper towel-lined plate to drain excess grease. If using tortilla chips, ensure they are fresh and crispy.
  2. Marinate the Tuna: Cut the sushi-grade Ahi tuna into 1/2 to 3/4-inch chunks. (Pro Tip: Freezing tuna for 15-20 minutes before cutting can make it easier). Place the tuna in a medium bowl. Add the shoyu soy sauce, ponzu sauce, sesame oil, and fresh lime juice. Gently toss everything together until the tuna is well-coated. Let marinate for 5-10 minutes (no longer than 20 minutes).
  3. Make the Yum Yum Sauce: In a separate bowl, combine all the Yum Yum Sauce ingredients: mayonnaise, melted butter, ketchup, rice wine vinegar, grated garlic cloves, sugar, water, smoked paprika, onion powder, and salt. Whisk vigorously until the sauce is smooth, creamy, and has a pourable consistency. Adjust with more water if needed, and taste to adjust seasonings.
  4. Assemble the Poke Nachos: Arrange your crispy wonton chips or tortilla chips on a large serving bowl or platter. Evenly distribute the marinated tuna over the chips. Generously drizzle the homemade Yum Yum Sauce over the tuna and chips. Scatter your desired toppings: diced avocado, sesame seeds, chopped cilantro, sliced jalapeños, cucumber chunks, thinly sliced seaweed, crispy onions, sliced green onions, and garlic crisps. For a final touch, add an extra drizzle of Yum Yum Sauce. Serve immediately and enjoy!

Notes

  • Ensure chips are crispy and fresh: Fry wonton wrappers in small batches until golden. If using tortilla chips, ensure they are fresh to maintain crunch.
  • Prepare the Yum Yum Sauce just before serving: Combine mayo, melted butter, ketchup, rice wine vinegar, grated garlic, sugar, water, smoked paprika, onion powder, and salt to taste for best flavor and consistency.

Variations
