In a pinch, canned cranberry sauce (the whole berry kind, not jelly) can also work, but adjust sugar levels as needed. However, for that ultimate burst of tart-sweetness, fresh is truly best.

In a small bowl, combine the warm milk with active dry yeast and one tablespoon of granulated sugar. Stir gently and let it sit for about 5-10 minutes. You’ll know your yeast is active and ready when it becomes foamy and frothy on the surface, indicating it’s alive and thriving.

Once your yeast mixture is bubbly, pour it into the bowl of a stand mixer. Add the remaining dough ingredients: one large egg, two egg yolks, 1/2 cup of granulated sugar, melted butter, vanilla extract, orange zest, bread flour, cinnamon, nutmeg, and kosher salt. Attach the dough hook attachment and knead the dough on medium-low speed for a full 10 minutes. The dough should gradually pull away from the sides of the bowl and be slightly tacky to the touch, yet elastic and smooth. This thorough kneading is crucial for developing the gluten structure that gives cinnamon rolls their characteristic chewiness and light texture.

For a homemade filling: combine fresh cranberries, 1 cup of granulated sugar, 2 tablespoons of orange zest, 2 tablespoons of lemon juice, and 1/2 cup of pomegranate or cranberry juice (or water) in a small saucepan over medium-low heat. Stir occasionally, bringing the mixture to a gentle boil for 3 minutes. Then reduce to a simmer and cook for 15-20 minutes, or until the cranberries have softened and burst, and the sauce begins to thicken. Remove from heat, stir in 3 tablespoons of butter until melted, and cool completely.

This border will help seal the roll. Starting from the long edge opposite the border, carefully and tightly roll the dough into a log. A tight roll ensures beautiful, defined swirls in your finished cinnamon rolls. Using a sharp serrated knife or even a piece of unflavored dental floss, cut the log into 1-inch thick individual rolls. This technique helps maintain the round shape without flattening the dough.

Arrange the cut rolls into a Calphalon Nonstick 9-inch round cake pan, leaving a little space between each roll to allow for expansion during the second rise and baking. Depending on the size of your pan, you may need to use two pans.

Step 5: Second Rise and Baking

Cover the pan(s) of rolls with a clean kitchen towel. Allow the rolls to rise again in a warm, draft-free place for another 20-30 minutes, or until they look visibly puffy and have nearly doubled in size. During this time, preheat your oven to 350 degrees F (175 degrees C).

Once risen, bake the cranberry cinnamon rolls for 25-30 minutes, or until they are golden brown on top and cooked through. The rolls should sound hollow when gently tapped. As they bake, your kitchen will fill with the most incredible aromas, signaling that these delightful treats are almost ready!

  • 2 1/4 tsp Active Dry Yeast
  • 1 tbsp Granulated Sugar
  • 1 Large Egg
  • 2 Egg Yolks
  • 1/2 cup Granulated Sugar
  • 1/3 cup Salted Butter, (melted)
  • 2 tsp Vanilla Extract
  • 2 tbsps Orange Zest, (about one orange)
  • 4 cups Bread Flour
  • 1 tsp Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Kosher Salt

Filling

  • 12 oz Fresh Cranberries
  • 2 tbsps Orange Zest
  • 2 tbsps Lemon Juice
  • 1 cup Granulated Sugar
  • 1/2 cup Pomegranate Juice or Cranberry Juice, (you can also use water)
  • 3 tbsps Butter

Orange Icing

  • 3 cups Powdered Sugar
  • 3-4 tbsps Orange Juice, (pulp free)
  • 4 tbsps Salted Butter, (melted)
  • 1 tbsp Orange Zest

Instructions

  1. Combine warm milk (105-115°F), yeast, and 1 tbsp of sugar in a small bowl. Let sit until yeast becomes foamy, about 5-10 minutes. Add mixture to the bowl of a stand mixer. Continue to add eggs, 1/2 cup of sugar, melted butter, vanilla extract, orange zest, bread flour, cinnamon, nutmeg, and kosher salt. Attach the dough hook and knead dough in the mixer for 10 minutes until smooth and elastic.
  2. Add dough to a large, well-oiled bowl. Cover with plastic wrap and allow the dough to rise in a warm, draft-free place for about 1 1/2 hours, until the dough has doubled in size.
  3. While the dough is rising, prepare the cranberry filling and allow it to cool completely before using. Over medium-low heat, add fresh cranberries and granulated sugar to a small saucepan along with orange zest, lemon juice, and pomegranate or cranberry juice (or water). Mix together gently.
  4. Bring mixture to a boil, stirring occasionally. Boil for 3 minutes, then reduce to a simmer for 15-20 minutes, until cranberries are softened and burst, and the sauce begins to thicken. Remove from heat and add butter. Stir until butter has melted completely. Allow the filling to cool completely.
  5. Remove dough from the bowl onto a lightly floured work surface. Using a rolling pin, roll out the dough into a 12×18 inch rectangle, cutting off any excess dough to create neat edges. Spread the cooled cranberry filling evenly over the dough, ensuring all of the surface is covered, leaving a small border on one long edge. Roll the dough tightly, lengthwise, into a log.
  6. Preheat oven to 350 degrees F (175°C). Using a sharp serrated knife or unflavored dental floss, cut the log into 1-inch thick pieces and place them into a Calphalon Nonstick 9-inch cake pan. Cover with a towel and allow the rolls to rise again for 20-30 minutes, until puffy. Bake for 25-30 minutes, or until golden brown.
  7. To make the orange icing, combine the powdered sugar, orange juice, melted butter, and orange zest in a bowl. Whisk together until smooth and completely combined. Drizzle generously over the warm baked cranberry cinnamon rolls. Serve immediately and enjoy!
