If it’s fried and crispy, I’m usually all in. These fried green tomatoes are no exception. They come out of the skillet hot, crisp and irresistible—then mysteriously disappear.

This is a family recipe I’ve revised slightly for consistent results. The tomatoes develop a crunchy exterior while remaining soft and slightly tart inside. It’s a perfect way to use firm, green tomatoes and a simple dish to share with friends and family.

How To Make Fried Green Tomatoes

Prep the tomatoes. Slice the green tomatoes 1/4 to 1/3 inch thick. Arrange them in a single layer on a paper towel–lined baking sheet and season both sides with 1/2 teaspoon kosher salt. Let them rest for 10–15 minutes, then pat them completely dry. This step helps the coating stay crisp. Finish by sprinkling the slices with Cajun seasoning.

Drain and serve. Transfer the finished tomatoes to a wire rack or a paper towel–lined plate to drain. Season lightly with salt while still hot and serve immediately for the best texture.

Pro Cooking Tips

  • Choose truly unripe tomatoes. Look for evenly green, very firm fruit. Any yellow or pink indicates the tomato has started ripening and may be too soft and juicy for frying.
  • Shake off excess flour. A thin, even flour layer is all you need; too much will absorb the wet mixture and create a gummy layer under the crust.
  • Press the coating on. Firmly press the cornmeal-panko mixture onto both sides and along the edges. Let the breaded slices rest for 5 minutes so the coating adheres.
  • Use a heavy skillet. Cast iron or another heavy-bottomed pan holds heat and helps maintain oil temperature as you add batches.
  • Keep oil temperature steady. Maintain 350–365°F during frying. Oil that’s too cool makes the coating greasy; oil that’s too hot browns the crust before the tomato softens.
