This exquisite peach burrata salad has quickly become a new household favorite. It’s absolutely loaded with the freshest fruits and vegetables, creating a flavor profile that borders on perfection. The inspiration for this delightful recipe stems from a truly unforgettable journey through Central California, where I had the privilege of touring with CA Grown. Our adventure included visits to incredible locations like the Sea to Sky Farm and Christopher Ranch, a fantastic time at Gilroy Gardens, and the pleasure of tasting fabulous California Wines. This trip deeply influenced my appreciation for fresh, locally sourced ingredients, which shines through in every bite of this salad.

During the tour, we witnessed firsthand the innovative farming practices that make California a leader in sustainable agriculture. It was truly inspiring to see how these methods are actively contributing to saving the world, from transforming waste products into reusable energy to conserving precious water resources through advanced drip irrigation systems and much more. This commitment to sustainability is reflected in the quality and freshness of the produce, reinforcing why supporting local and sustainable farming is so important.

I am incredibly proud to say that the majority of the ingredients in this easy arugula burrata salad are sourced directly from California farms, embodying the spirit of responsible and delicious eating. We begin by generously layering peppery arugula onto a serving plate, then artfully topping it with vibrant cherry tomatoes, juicy fresh cherries, sweet peaches, creamy avocado, savory prosciutto, and tender sautéed corn. But the true star ingredient, the secret weapon that masterfully ties all these sweet, salty, and savory flavors together, is fresh mint. Its refreshing aroma and taste add an unexpected, yet utterly delightful, additional layer of flavor, making this salad truly unforgettable.

To complete this culinary masterpiece, we add a sprinkle of crunchy almonds and the pièce de résistance: luscious burrata cheese, followed by a generous drizzle of our quick and easy homemade vinaigrette. Trust me, this will swiftly become the BEST burrata salad recipe you’ve ever had, guaranteed to be a staple in your home throughout the summer season and beyond!

A fun fact to remember when shopping for your ingredients: California is renowned as the #1 state in the U.S. for producing over 100 different fruits and vegetables! This means that a significant portion of the fresh, high-quality ingredients for this peach burrata salad proudly comes from the Golden State. Here’s a closer look at what you’ll need to create this masterpiece:

  • Peaches: When peaches are in their prime, it’s a culinary imperative to use them! Their sweet, juicy flesh is the star of this salad, perfectly balancing the peppery arugula and salty prosciutto. I’ve also incorporated them into my delightful Peach Caprese Salad. Choose ripe, fragrant peaches for the best flavor.
  • Fresh Corn: Sautéed corn adds a delightful sweetness and a hint of savory depth that truly amplifies the overall flavor profile of this salad. A quick sauté caramelizes its natural sugars, bringing out an even richer taste.
  • Cherry Tomatoes: These sweet, sun-kissed summer tomatoes provide bursts of juicy acidity and vibrant color, creating a wonderful counterpoint to the richer ingredients. Halving them releases their full flavor and makes them easier to enjoy.
  • Fresh Cherries: As soon as the season for fresh cherries arrives, I stock up! Their intense sweetness and slight tartness are simply divine in this salad. If fresh cherries are out of season, feel free to substitute with any other sweet, in-season berries like blueberries or raspberries.
  • Avocado: For an essential pop of creamy, buttery texture, avocado is a must. It adds a luxurious mouthfeel and helps to mellow the more intense flavors, tying everything together beautifully.
  • Mint: This is my “secret ingredient” that truly brings the entire salad into harmonious balance. The refreshing coolness of fresh mint, paired with the creamy burrata and all the vibrant fruit and arugula, creates an explosive and unforgettable flavor sensation. Don’t skip it!
  • Prosciutto: The delicate, salty cured ham offers a fantastic contrast to the sweet fruits and peppery greens. Its savory notes provide an elegant depth and an irresistible umami kick.
  • Fresh Burrata Cheese: The star of the show! Burrata cheese is a true Italian delicacy, a fresh mozzarella shell filled with a rich, creamy mixture of stracciatella and cream. This gives it an unbelievably soft, buttery, and utterly irresistible texture that elevates the entire salad. If fresh burrata is unavailable, fresh mozzarella balls can be a good substitute, though they won’t offer the same luscious creaminess.
  • Almonds: A sprinkle of almonds provides a satisfying crunch and a subtle nutty flavor, adding another layer of texture to each bite. You can also experiment with other crunchy nuts like pistachios, pine nuts, or even chopped walnuts for a different twist.
  • Arugula: The foundation of our salad, fresh arugula offers a characteristic peppery bite, along with subtle nutty and spicy undertones. Its robust flavor stands up wonderfully to the rich burrata and sweet fruits, ensuring every forkful is exciting.

Creative Variations to Try

While this Burrata Arugula Salad is perfect as is, it’s also incredibly adaptable. Feel free to experiment with these delicious variations to customize it to your taste or what you have on hand:

  • Add a Hearty Protein: To transform this already substantial salad into an even more filling main meal, consider adding a grilled protein. Slices of tender flank steak or succulent smoked chicken breasts would be fantastic additions, providing a satisfying boost of protein and savory flavor.
  • Seasonal Berry Swaps: If fresh cherries are not in season or you simply prefer other berries, feel free to substitute! Any of your favorite fresh, sweet berries – such as blueberries, raspberries, or even sliced strawberries – would complement the other ingredients beautifully.
  • Alternative Dressings: For a different flavor profile, try swapping the apricot vinaigrette. A rich creamy balsamic dressing would be a decadent choice, or a simple balsamic glaze, as I used in my peach caprese salad, would add a lovely sweet and tangy finish.
  • Grill the Peaches for Depth: For an elevated summer touch, try grilling your peaches! Grilling caramelizes their natural sugars, intensifying their sweetness and imparting a delightful smoky flavor. This technique adds a unique depth that makes the salad even more special and truly encapsulates the essence of summer.
  • Cheese Alternatives: If burrata is hard to find, fresh mozzarella pearls or torn fresh mozzarella can be used. For a tangier flavor, crumbled goat cheese or feta can also work, though they will change the creamy profile.
  • Nutty Alternatives: Beyond almonds, consider candied pecans, walnuts, or even toasted pumpkin seeds for different textures and flavors.

How to Make Peach and Burrata Arugula Salad

Creating this stunning Burrata Arugula Salad is simpler than you might think. Follow these straightforward steps to assemble a refreshingly delicious meal that’s perfect for any summer occasion:

Ears of corn being sautéed in a skillet with olive oil, developing a golden-brown hue.
Sautéing fresh corn in olive oil until perfectly golden brown.

Step 1: Sauté the Corn. Heat a small amount of good quality olive oil in a skillet over medium-high heat. Once the skillet is warmed and the oil shimmers, add the fresh corn kernels. Sauté, stirring occasionally, until the corn is tender and beautifully golden brown, which should take approximately 5-7 minutes. This step enhances the corn’s natural sweetness and adds a lovely depth of flavor and texture to the salad. Once cooked, set aside to cool slightly.

Step 2: Prepare the Produce. While the corn cools, prepare the rest of your fresh produce. Carefully remove the pits from the sweet cherries and cut them in half. Slice the ripe peaches into elegant wedges or bite-sized pieces. Dice the creamy avocado into chunks and halve the cherry tomatoes. Chop the fresh mint and set aside. Having all your ingredients prepped in advance makes assembly quick and enjoyable, ensuring a harmonious blend of flavors and textures.

Step 3: Whisk the Apricot Vinaigrette. In a small jar with a tight-fitting lid (like a mason jar) or a small mixing bowl, combine all the ingredients for the vinaigrette: extra virgin olive oil, dried oregano, balsamic vinegar, a pinch of kosher salt and freshly ground black pepper to taste, Dijon mustard, fresh lemon juice, sweet apricot preserves, and finely grated garlic. Secure the lid and shake vigorously, or whisk thoroughly with a fork, until all ingredients are well combined and the dressing is emulsified. This homemade vinaigrette adds a bright, tangy, and subtly sweet counterpoint to the rich salad components. Set aside.

Step 4: Assemble and Serve. On a large serving platter or in a spacious salad bowl, spread out the fresh arugula leaves. Drizzle a small amount of the prepared vinaigrette over the arugula (be sure to reserve a good portion for topping the assembled salad), and gently toss to coat the greens. Arrange the prepared peaches, sliced cherry tomatoes, avocado chunks, halved cherries, and folded slices of prosciutto artfully over the arugula. Gently place the luscious burrata cheese in the center or strategically around the platter. Sprinkle with crunchy almonds and the fresh chopped mint. Finish with another generous drizzle of the remaining apricot vinaigrette. Serve this magnificent Burrata Arugula Salad immediately with a side of crusty olive bread for a truly unforgettable meal. Expert Tips for the Perfect Burrata Arugula Salad

Achieving the perfect Burrata Arugula Salad is all about attention to detail and utilizing the freshest ingredients. Keep these expert tips in mind to ensure your salad is nothing short of spectacular:

  • Prioritize Fresh Ingredients: The quality of your ingredients directly impacts the flavor of this salad. Always opt for fresh, ripe produce. Avoid canned fruits entirely, as their texture and taste won’t compare. For the vinaigrette, using freshly squeezed lemon juice rather than bottled will make a noticeable difference in brightness and zest. Seek out the CA GROWN logo when shopping for produce to ensure you’re getting the best quality, locally sourced ingredients.
  • Invest in Quality Olive Oil: Extra virgin olive oil forms the very foundation of your vinaigrette, so its quality is paramount. A high-quality olive oil will lend a rich, nuanced flavor to the dressing, enhancing all the other ingredients. Avoid generic or low-grade oils; a good olive oil can truly elevate the entire dish.
  • Serve Immediately for Best Texture: This salad is at its absolute peak when assembled and served fresh. Arugula can wilt quickly, and burrata is best enjoyed at room temperature for maximum creaminess. Assemble right before serving to ensure every component retains its ideal texture and vibrancy.
  • Room Temperature Burrata: For the most luxurious, creamy experience, remove the burrata from the refrigerator about 15-30 minutes before serving. This allows it to soften slightly, releasing its rich, milky interior more readily when cut.
  • Balance Flavors: Taste as you go, especially with the vinaigrette. Adjust salt, pepper, and lemon juice to your preference. The goal is a harmonious balance of sweet, salty, tangy, and peppery notes.

Storing Leftovers & Meal Prep Strategies

While this Burrata Arugula Salad is undeniably best enjoyed freshly made, sometimes leftovers happen, or you might want to get a head start on preparation. Here’s how to best handle storage and meal prepping to maintain its freshness and flavor:

This salad is truly at its most delicious when served and eaten on the same day it’s prepared. This prevents the delicate arugula from becoming soggy and ensures the burrata retains its perfect texture. If you do happen to have any leftovers, it’s best to store them in an airtight container in the refrigerator for a maximum of 1-2 days. For optimal enjoyment, we highly recommend consuming any leftovers within 24 hours of preparation.

If you’d like to prepare components of this salad ahead of time to make assembly quicker later, here are some smart meal prep tips: prepare the salad dressing by combining all ingredients in an airtight jar, such as a mason jar, and storing it in the refrigerator. This dressing will keep well for up to a week. Separately, wash and dry your arugula, and cut up all the fruits and vegetables (peaches, cherries, avocado, tomatoes, corn). Store each component in its own airtight container in the refrigerator. Wait until just before you are ready to serve to combine the arugula, fruits, vegetables, prosciutto, burrata, and dressing. This method ensures maximum freshness and prevents sogginess, allowing you to enjoy a perfectly crisp and vibrant salad whenever you desire.

Burrata Arugula Salad FAQs

What goes well with burrata cheese?

Burrata is incredibly versatile and pairs wonderfully with a wide array of ingredients. For a classic and refreshing combination, serve it with ripe, fresh tomatoes, fragrant basil, and a generous drizzle of high-quality olive oil. It also beautifully complements sweet fruits like figs, peaches, and berries, which contrast with its creamy richness. Savory elements like salty prosciutto, crispy bread, and balsamic glaze also work exceptionally well, creating a delightful balance of sweet, salty, and creamy flavors. Its mild, buttery taste makes it a perfect canvas for many culinary creations.

What pairs well with arugula greens?

Arugula, with its distinct peppery and slightly bitter notes, pairs wonderfully with ingredients that complement or contrast its robust flavor. It’s excellent in bright, tangy salads with ingredients like cherry tomatoes, shaved Parmesan cheese, and a zesty lemon vinaigrette. For fruit-based salads, it harmonizes beautifully with sweet fruits such as pears, apples, figs, and peaches. Nuts like walnuts and almonds add a delightful crunch. Arugula also stands up well to various proteins, including savory prosciutto, grilled chicken, flank steak, and seafood, offering a delightful mix of peppery, sweet, and savory elements. Its versatility makes it a fantastic base for many flavorful dishes.

Is baby arugula healthier than regular arugula?

Nutritionally, baby arugula and mature, regular arugula are very similar. Both are powerhouse greens, offering an abundance of essential vitamins (like A, C, and K), along with vital minerals such as calcium and potassium. The primary differences lie in their flavor and texture. Baby arugula tends to have a milder, more delicate peppery flavor and a tender, softer texture, making it a popular choice for salads. Regular arugula, on the other hand, typically has a more pronounced, stronger peppery taste and a slightly tougher texture. Therefore, neither is definitively “healthier,” but baby arugula is often preferred by those who find the intense peppery kick of mature arugula to be too strong, or who prefer a softer mouthfeel in their salads.
