  • 2 tsp Onion powder
  • 1 tbsp Garlic powder
  • 1 tbsp Ground ginger
  • 2 tsp Ground coriander
  • 1 tsp Cinnamon
  • 1 tsp Red pepper flakes, optional (for ribs)
  • Salt and Pepper, to taste
  • 1 ½ tsp Curry powder (for sauce)
  • ¼ cup Brown sugar (for sauce)
  • ½ cup Peanut butter (for sauce)
  • 3 tbsp Soy sauce (for sauce)
  • ½ cup Water (for sauce)
  • Pinch red pepper flakes (for sauce, optional)

Instructions

  1. Preheat oven to 275 degrees F (135°C).
  2. Carefully remove the membrane from the back of the ribs. In a small bowl, combine onion powder, garlic powder, ground ginger, ground coriander, ground cinnamon, and red pepper flakes (if using for ribs). Mix thoroughly. Season the ribs generously with salt and pepper, then rub the seasoning blend over both sides of the ribs, ensuring they are well coated.
  3. Line a sturdy baking sheet or a large roasting pan with heavy-duty aluminum foil. Place the seasoned ribs on the prepared baking sheet. Drizzle a little olive oil over the ribs, then cover them tightly with another layer of aluminum foil, crimping the edges to create a sealed packet. Bake for 3 hours.
  4. While the ribs are braising, prepare the peanut curry sauce. Grab a small saucepan and place it over medium-low heat. Add the curry powder, brown sugar, peanut butter, soy sauce, water, and a pinch of red pepper flakes (if desired for sauce). Whisk constantly to prevent sticking and burning.
